Veg alternative to beef, um tricky. You could always add extra peppers and more peppers.
Looks homey and warming, that goulash. I have no idea what's "supposed" to go in it, but your choices look very nice. Have a Hungarian friend who got really confused with a U.S. recipe calling for "paprika" since for him that's the generic word for that green vegetable in your photo. So he added a teaspoon of it...and yuck.
